German chamomile is a plant that grows 15-60 cm tall and has characteristic white flowers with a yellow center. When in bloom, it has a pleasant honey and soothing scent. It grows throughout Europe and temperate areas of Asia, today it can also be found in temperate areas of North America and Australia. The useful part of German chamomile is its flower, which also contains essential oil (0.3 – 1.5%). The most important active ingredient in chamomile essential oil is bisabolol. Chamomile contains the sesquiterpene matricin, which has a slightly bitter taste. During steam distillation, camazulene is formed from matricin, which gives the essential oil its characteristic blue color. The flowers also contain flavonoids, coumarin and polysaccharides. The most important flavonoids are apigenin and apigenin-7-O-glucoside, which are attributed to their spasmolytic effect (alleviation of spasms).
