Barley grass contains large amounts of nutrients, mainly a source of dietary fiber, vitamin C and iron. Young shoots sprout from the barley grains, which draw the rich nutrients from the seeds. Barley is considered to be a very old grain that can withstand rather harsh climatic conditions.
