Greek hay, also called saber triplat or fenugreek, is an upright, annual plant that grows to a height of 40-90 cm. It has green leaves and small white flowers. Pods contain 10-20 small, flat, yellow-brown seeds with a sharp taste and strong aroma. Seed constituents include flavonoids, alkaloids, coumarins, vitamins and saponins; the most abundant alkaloid is trigonelline, and coumarins include cinnamic acid and scopoletine. Dried seeds of Greek hay were also found in the tomb of the Egyptian pharaoh Tutankhamun.
